They are a great alternative to banana bread if you are looking for a way to use up your overripe bananas.

Banana Baked Donuts

The baked donuts are on my list of favorite things to bake because they are incredibly versatile and easy. You put them in a mold, cook them and bingo, they are ready within the shortest time possible.

1 cup (120 grams) all-purpose flour ½ cup (107 grams) brown sugar packed ½ teaspoon salt 1 teaspoon baking powder 2 overripe bananas mashed 2 ½ tablespoons unsalted butter melted 1 large egg

For Donuts:  

4 tablespoons unsalted butter 1 cup (113 grams) powdered sugar 1 teaspoon vanilla extract milk or heavy cream as needed

For Glaze:  

Step 1

Place in a pre-heated oven and bake at  350 degrees (F). Coat your donut mold with nonstick spray and this should be set aside.

For Donuts:  

Step 2

In a separate medium-sized bowl, combine the flour, light brown sugar, baking powder, and the pinch of salt. 

Step 3

In a separate bowl mix the mashed bananas, melted butter, and egg. Gently fold the wet ingredients into the dry ingredients. Mix only until just combined. The batter will be thick.

Step 4

Pour batter into the donut pan and put the donut pan on a cookie sheet. 

Step 5

Place the donuts into the pre-heated oven and bake for 17-20 minutes or till they are springing back on touch. 

Step 6

Take it out of the oven, let it cool in the pan for ten minutes and then move it and let it cool further.

Heat the butter in a medium saucepan over medium heat until it has melted and been evenly blended with the other ingredients in the pan.   

For Icing:  

After this, the mixture will begin to foam and orangy brown bits at the base of the pan will begin to appear and this will take roughly 5 minutes.

Take it off the heat and let the butter cool down a little.

add the powdered sugar and vanilla and mix with a whisk until the mixer is not lumpy. Ever notice how the consistency is thick? You can put milk or heavy cream materials into the icing.

Spoon the icing over the top of the donuts and then place the bottoms of the donuts into the icing.
