3-4mashed ripe bananas 6Tbsp unsalted butter, melted ½cup granulated sugar ½cup packed light brown sugar 1large egg, at room temperature 1tsp vanilla extract 1 ½cups all-purpose flour 1tsp baking soda ¼tsp salt 1cup chocolate chips or toasted walnut pieces (optional)

Step 1

First of all, the oven should be preheated to 325ºF and then grease a 9×5 loaf pan.

Step 2

whisk the banana with the melted butter and then mix the mashed bananas with the granulated and brown sugar. Switch off the flame and add the egg and vanilla, stirring well. 

Step 3

In another bowl, mix the dry ingredients, which are flour, baking soda and salt, through a sifter. Fold this into the banana mixture and mix only until everything is well incorporated. Pour in the chocolate chips or walnut pieces, if you are using them.

Step 4

Pour the batter into the loaf tin that has been greased and then sprinkle some sugar on it. Bake for about 75 minutes or until a cake tester put in the middle portion of the cake turns out clear.

Step 5

After baking, remove the cake from the oven and leave it to cool for about 20 minutes in itself, then take it out to cool it on a wire rack until it fully cools.
