If you enjoy bananas, then you have to try this one out. Um, hello amazing breakfast food? Banana Pudding Donuts are soft and crunchy at the same time and filled with delicious banana cream.
They are the best for any occasion, whether served as a special dinner party delight or a nice cup of tea with friends.
Bonus: It is very tasty the next day, especially if reheated with a cup of coffee in the morning.
1 ¼cups lukewarm milk ½cup sugar 2 ¼sp dry active yeast 3 ½cups bread flour ½tsp salt 1egg 2Tbsp melted butter 4cups frying oil
1 ½cups milk ½ cup sugar, divided 4 large egg yolks, whisked together 4 Tbsp cornstarch 3 Tbsp butter, softened 1 ½tsp vanilla extract 1 banana, mashed
For the dough, combine milk, sugar, and yeast. Allow it to sit until the yeast forms a nice foamy head on the surface, which usually takes only about 10 minutes. At the same time, we dissolve flour and salt in a large bowl and let it sit. Add the egg and melted butter to the yeast mixture once it has been activated. Incorporate the wet ingredients into the dry, then knead into a dough.
Transfer the dough to a work surface and then knead it for at least 6–8 minutes and if possible, until the dough forms a nice, large ball. Transfer the hash browns to an oiled bowl, then cover with plastic wrap and a towel. Let it rise for about an hour, until it has doubled its size.
On the other hand, for the filling, warm milk to boil in another saucepan. Add ¼ cup sugar and whisk until dissolved.
Combine egg yolks with the remaining ¼ cup of sugar and cornstarch. Gradually, gently fold the milk into the egg yolks and whisk to blend. Pour this mixture back into the saucepan and cook on low, stirring it until thick, about 5 minutes.
Stir in the butter, and vanilla and mashed banana. Stir till the butter has melted and all ingredients are well mixed. Allow to cool before leaving to cool completely on the side, then chill in the refrigerator.
When the dough has doubled in size, remove it from the bowl and divide it into 12 parts. Format into balls and place in a towel while warming over the oil.
Heat frying oil in a large pot to 350 degrees F. Submerge a few at a time, preferably 2-3 donuts, in the oil and fry them. Flip them frequently and take them out when they are golden brown, which takes around 3 minutes. Allow to cool on a wire rack. Repeat with the remaining dough.
After all the donuts are done and have cooled to room temperature, fill a small tipped pastry bag or filling injector with the banana filling. Insert the tip into the donut and push the filling until the donut is filled with as much as it can take. Repeat with remaining donuts.
To serve, sprinkle the donuts liberally with powdered sugar.
